Why Raw?

RAW COCOA

Raw cocoa is one of, if not the most health promoting foods. A few of the important health benefits of raw chocolate include:
  • Out of all the whole foods that contain antioxidants, raw cocoa is the highest in the world.
    • Two tablespoons of chocolate (one ounce) has more antioxidants than 4 cups of green tea.
      • Contains more heart healthy phenols than red wine.
      • Contains more cardioprotective proanthocyanidins than blueberries
      • Highest whole food source of magnesium which:
    • Relaxes muscles
    • Improves peristalsis in the bowels
    • Relaxes the heart and cardiovascular system
  • Raw chocolate contains several compounds that stimulate the production of serotonin and dopamine which help enhance one’s mood and emotional state.
  • Scientists have found that cocoa polyphenols can positively affect blood-glucose levels .
  • Anti-inflammatory and antioxidant compounds help protect the brain and support mental health and cognitive function.

The health enhancing properties of cocoa are severely limited by heating, adding dairy products and by using alkaline washes [a practice employed by many Belgian chocolate makers]. Being a raw food, Raw Amour is not heated above a temperature that would destroy the enzymes and nutrients which give chocolate its health promoting properties.

ORAC VALUES

Free radicals are the by-products of oxygen use by our cells. Too many free radicals can lead to destruction of normal structures such as DNA in cells. Research has shown that free radical damage has negative consequences that contribute to illnesses such as: cancer, Alzheimer’s disease, diabetes, Parkinson’s disease, heart disease and aging. Antioxidants are phenolic substances in our food that protect our health by scavenging the free radicals that cause DNA damage. Out of all the whole foods that contain antioxidants, unprocessed (raw) cacoa is the highest in the world. It is higher in antioxidant concentration than processed cocoa, green tea and blueberries, and has more heart healthy phenols than red wine. The Oxygen Radical Absorbance Capacity (Orac) test measures the capacity of a specific food substance to absorb and delete excess free radicals from the body. The Orac test cited below was performed on February 21, 2012 at the United States Department of Agriculture regulated Zen-Bio Laboratory in Triangle Park North, Carolina.

It is a known fact that excessive heat during fermentation and roasting of the beans, cocoa fat content and the inclusion of milk in the processing of chocolate can negatively affect the antioxidant benefits of cocoa. Variations in Orac values can be attributed to these variables.

Studies show that dairy products (note Godiva milk chocolate) actually block the absorption of antioxidants in chocolate. Even though it is hand-made from high quality ingredients, the higher heat used in the roasting processing of Fruition Chocolate diminished its antioxidant capacity. Cocoa butter, composed almost exclusively of fat, has no antioxidant capacity. Even though it is raw, the Orac value of Choc Alive is extremely low because the number one ingredient in Choc Alive is cocoa butter.

RAW COCONUT OIL

Similar to raw cocoa, the natural nutrition benefits of coconut oil are maintained by processing the oil at a heat below 115 degrees. These are evidence based health benefits of raw Coconut Oil – It contains a unique combination of fatty acids with powerful medicinal properties. 90% of coconut oil’s fatty acids are saturated. Many studies that include hundreds of thousands of people prove that the “artery-clogging” attributes of saturated fatty acids is simply a myth. Non-hydrogenated medium-chain triglycerides saturated fats like coconut oil are not harmful. – It can increase your energy expenditure, helping to burn more fat. It is a fact that different foods affect our bodies and hormones in different ways. In this regard, all calories are not equal. One study found that 15-20 grams of medium-chain triglycerides (2-3 Raw Amour truffles) per day increased 24 hour energy expenditure by 5%, totaling about 120 extra calories burned per day. – It contains lauric acid which fights off infections by killing bacteria, viruses and fungi – It can curb hunger. In two short term studies men fed medium chain triglycerides ate 256 few calories per day on average. – It can improve blood cholesterol levels and may lower your risk of heart disease. Studies in both humans and rats show that coconut oil improves important risk factors attributed to heart disease such as: Total, LDL, and HDL cholesterol along with improving blood coagulation factors and antioxidant status. – It contains fatty acids that can boost brain function in Alzheimer patients. – It can reduce appetite and increase fat burning, which helps fat loss, especially dangerous abdominal fat.

RAW AGAVE

Just a note about the use of raw agave as a sweetening agent. We have found that there are vast quality differences between different sources of agave. Over the past three years of research and development of Raw Amour we have tested out nine different sources of agave. The raw agave that we finally chose is of the highest quality.
